whole walnuts (out of their shells, but
not chopped)
olive oil
dried whole rosemary
salt
cayenne (or more to taste)
Method :
Preheat the oven to 350°C.
Place the walnuts on a jelly roll pan
(a baking sheet with a rim around all four sides).
Drizzle the olive oil over the
walnuts, and sprinkle with the rosemary leaves, the salt, and the
cayenne.
Toss lightly with your hands or a pair
of spoons.
Bake for 25-30 minutes, until the nuts
are toasted brown and you can smell the toasted walnut and rosemary.
Be careful not to let them burn, or
you'll ruin the flavor.
Makes 2 cups
You can give peanuts or almonds this same
treatment, but leave out the rosemary. Both nuts have a sweeter flavor
that's better accented by the cayenne and salt alone. Buy unsalted nuts
and roast them according to the directions for the walnuts, but using
only olive oil, salt and cayenne.
