Banana and Coconut Cake (Kue Pisang dan Kelapa) Recipe
Ingredients :
125g butter, at room temperature
1 cup caster sugar
2 eggs
3 ripe bananas
1.5 cups self-raising flour
1/2 tsp bicarbonate soda
1/2 tsp ground cinnamon
1 cup desiccated coconut
Method :
Preheat oven to 180C. Lightly grease a 20cm cake tin and line the bottom
with baking paper. Combine butter and sugar in a mixing bowl. Cream butter
and sugar together until light and fluffy. Add eggs, one at a time, and
beat well after each addition.
Place bananas
in a food processor with lemon juice. Blend until very mushy. Stir bananas
through mixture. Add flour, soda, cinnamon and coconut. Stir until
combined. Spoon mixture into prepared cake tin and bake in preheated oven
for 40-45 minutes or until a skewer comes out clear. Leave cake to cool
for 10-15 minutes then turn out onto a cake rack. Cut into wedges and
serve with cream or ice cream and fruit.
