Rinse rice
under cold running water for 1-2 minutes or until water is clear. Combine
rice, water and pandan leaf in a large saucepan. Bring to the boil and
simmer over low heat for 40 minutes. Add syrup and cook for further 10
minutes or until rice is tender and liquid has been absorbed.
To
make syrup, combine sugar and water in a small saucepan. Bring to the boil
and simmer for 8-10 minutes. Serve pudding with coconut milk or ice cream.
