1/2-2/3 cup flour (depending on size and
moistness of fruit)
1/4 tsp baking powder
pinch of salt
1 tsp sugar
lime wedges
sugar for sprinkling or syrup
corn oil for deep-frying
Method :
Peel and mash
bananas. Stir in lime zest. Sift together the flour, baking powder, and
salt. Put mashed bananas into a mixing bowl and work in flour mixture a
little at a time to form a soft dough. Knead for a minute or two to
lighten the dough. Heat oil - it should be about one-half inch deep - and
fry small, flat cakes of dough, turning to brown evenly. Drain on paper
towel, sprinkle with sugar, and serve hot with lime wedges.
