Getuk Lindri Recipes

Ingredients :

1 kg cassava / tapioca root (peeled and diced)

180g granulated sugar

1/2 tsp vanilla

120g fresh grated coconut (white part only; steamed and mixed with 1/4 tsp salt)

100ml water

yellow and green coloring

Method :

Put sugar, vanilla and water in a large stockpot and bring it to the boil. Remove and leave to cool. Steam cassava till tender. Mash it while it is still hot. Pour in the sugar mixture and divide into 2 portions. Add the different coloring to each portion. Mix well. Pack into cookie cutters to mould the mixture. Then push them out onto a serving platter and sprinkle with grated coconut. Serve at room temperature or refrigerate for an hour to serve chilled.
