Glutinous Rice Flour Cake With Filling (Kuih Koci) Recipes
Ingredients :
For the dough :

glutinous rice flour
grated coconut, squeeze out enough milk to
mix into a soft dough
castor sugar
palm sugar (or demerara sugar)
water
grated coconut
screw pine leaf
Method :
Put the castor sugar, palm sugar,
water and screw pine leaf in a pan. Cook until the sugar dissolves. Add in the grated coconut and mix
well. Remove from heat and cool. Mix flour and coconut milk into a
smooth dough and divide the dough into 20 - 25 portions. Flatten each portion slightly. Put in 2 teaspoons of filling and
seal the cake. Prepare some banana leaves, enough
for 20 - 25 rounds of 20 cm in diameter. Fold the banana leaf into a cone
shape, put in the dough portions and tuck in the ends. Place the wrapped cakes on a
steaming tray and steam over a high flame for 10 - 15 minutes. Remove and cool before serving.
Serves 6 - 8
The banana leave give the cake a special
flavor. However, if you cannot get banana leaves, you can put the cakes
on a tray a few centimeters apart to allow to rise and then steam as
above.
