For the dough :
625 g
1 tbsp
For the filling :
250 g
270 g
1 or 2 |
glutinous rice, soaked overnight
corn flour
a few drops red coloring
green peas, soak for 4 hours and remove
the skin
sugar
ang koo moulds
vegetable cooking oil
banana leaves to line the moulds |
Method :

Steam green peas for 40 - 50
minutes, then mash finely.

Mix with sugar and dry fry over a
low flame until quite dry.

Drain the glutinous rice and grind
finely.

Wrap in cheese cloth and squeeze
out excessive water.

Mix the ground glutinous rice,
cornflour and coloring.

Knead into a dough.

Divide dough into small equal
portions.

Roll out each portion and place 1
tbsp filling on it.

Draw up the edges to enclose
filling and press with ang koo mould.

Place on a banana leaf which
should be cut slightly larger than the ang koo mould.

Steam for 10 - 20 minutes until
the cakes are cooked.

Brush with oil, remove from the
steamer and cool before serving.
Serves 6 - 8
This tea time teat, because of its red
color, is usually included in festive spreads. Red is favored as it
depicts good luck and prosperity.
