Kuih Kosui Recipes

Ingredients :

100g rice flour

50g tapioca flour

180g caster sugar

6-8 pandan leaves

1 tsp lye water

160g grated coconut

1/2 tsp salt

380ml water

150ml water

Method :

1. Mix 50g tapioca flour and 100g rice flour together. Sieve. Add in 380ml water.

2. Liquidize pandan leaves and 150ml water. Add in 1 tsp lye water and 180g sugar.

3. Mix steps 1 and 2 strain and stir over medium heat for about 2 minutes.

4. Pour batter into mould or cup and steam for 20 minutes.

5. Remove from steamer immediately. Cool and remove from moulds.

6. Serve with grated coconut.

If brown sugar Kuih Kosui is preferred, substitute step 2 with the following:-

Heat 40g brown sugar, 140g white sugar and 150ml water together. (If desired put in 2 pandan leaves). Add in 1 tsp lye water.
