Kuih Pau (Dousha Bao) Recipes

Ingredients :

Dough

650g wheat flour

1 1/2 tsp baking powder

1/4 tsp bicarbonate of soda

1 tsp salt

30g wet yeast

1 tsp corn oil

1/2 cup sugar

1 1/4 cup warm water

Fillings

430g red beans -soak overnight

3 screwpine leaves

9 cups of water

1 cup of cooking oil

550g sugar

1 tsp essence of vanilla

Method :

Preparing Filling

Cook red beans and screwpine leaves with water until soft and well done. Grind beans until fine. Heat a pan. Add in beans and sugar. Stir constantly while cooking. When the bean paste dries up, add in essence of vanilla. Cool the paste, preferably in a refrigerator.

Preparing Dough

Add sugar in warm water. Add yeast and dissolve it completely. Leave it for 10 minutes until yeast bubbles. In a mixing bowl, add sifted ingredients, salt, yeast solution and corn oil. Knead well for 10 minutes to make a soft dough. Spread some flour if the dough is sticky. Cover dough with a damp tea towel and leave it for 1 1/2 hours until the dough is twice as large. Punch the dough again and leave it for another 30 minutes.

Take out the dough and put on a flat board, knead slowly till smooth. Divide into two portions and roll it into an elongated shape. Cut into a 4cm piece. Flatten each piece with a rolling pin. Fill it with a spoonful of beans in the center. Gather up the 4 corners and tie at the top carefully. Steam the finished bun for 12 minutes in the steamer with boiling water.
