Take out the
bitter center from the lotus seeds. Soak barley, sago, lotus seed,
gingko nut and agar-agar strands in separate containers. Boil all
ingredients separately. Drain well. Keep in a separate bowl. Boil castor
sugar and rock sugar together with dried logans and 15 cups of water for
about 40 minutes until logans are soft and tender.
To serve -
Put a little of everything mentioned above in a bowl and pour in hot
syrup. On a hot day, this dessert can also be taken cold with crushed
ice.
