Pepes Jamur Kuping Recipes

Ingredients :

200g oyster mushroom (finely sliced)

1 egg yolk

20 pieces banana leaves (scalded and cut 20 x 20cm)

20 lidi or cocktail sticks

 

Spice Ingredients:

10 red chilies

10 cili padi / bird's eye

7 shallots

3 cloves garlic

5 candlenuts

2 tomatoes

1 cm galangal

1 tsp salt

1 tsp palm sugar or brown sugar

(all blended to a paste with 125ml thick coconut milk)

Method :

Combine the mushroom, egg and blended spice mixture. Place two tablespoons of mushroom mixture on a banana leaf. Fold, then bring up both sides to form a parcel. Secure with a lidi. Steam parcels for 25 minutes or till cooked through. Remove from heat. Grill until brown, if preferred.
