Pol Pani Pancakes (Sri Lankan Desserts) Recipe

Ingredients :

1 egg

2.5 cups milk or unsweetened coconut milk

135g (4.5 oz) plain (all-purpose) flour

pinch of salt

pinch of ground turmeric

2 tbsp melted butter

Method :

Lightly beat egg and milk together in a bowl.

Put flour and dry ingredients in another bowl, make a well and pour milk and egg into it. Mix to make a batter. Add melted butter and mix well. Cover with plastic wrap and leave in the fridge for about 20 minutes.

Stir well before using. If the batter is too thick, add a little milk and stir through.

Grease a small pan, then warm pan on medium heat. Stir batter and pour about 3-4 tbsp of batter into the pan. Swirl pan around so pancake covers the base of the pan, making a circle about the size of a saucer. Cook for 30 seconds - 1 minute, depending on how thick the batter is.

Flip with a spatula, cook the other side until it is brown and remove from pan. Dust pancakes with sugar as you stack them so they don't stick. Serve with filling, see Pol Pani Filling recipe on this website.
