Potato Jelly Recipe

Ingredients :

agar-agar

sugar

eggs

water

mashed potato

thick coconut milk, extracted from 1 coconut

Method :
  1. Boil the agar-agar until it dissolves.
  2. Beat the eggs until frothy, add in mashed potato and stir well.
  3. Strain.
  4. Add sugar into the agar-agar, stir until the sugar dissolves and strain.
  5. Mix together the potato mixture and the agar-agar mixture.
  6. Add the coconut milk and cook over low heat.
  7. Keep on stirring until the mixture thickens.
  8. Pour into a mould and cool it.

Serves 6 - 8
