Potato Jelly Recipe

Ingredients :

mashed potato

thick coconut milk, extracted from 1 coconut

Method :

Boil the agar-agar until it dissolves.

Beat the eggs until frothy, add in mashed potato and stir well. Strain.

Add sugar into the agar-agar, stir until the sugar dissolves and strain.

Mix together the potato mixture and the agar-agar mixture.

Add the coconut milk and cook over low heat.

Keep on stirring until the mixture thickens.

Pour into a mould and cool it.

Serves 6-8
