Wash and
drain groundnuts. To make the batter, mix all ingredients and mix well.
Heat oil in a wok over medium heat. Using a rempeyek mold, which is
round in shape, pour the batter over it in the hot oil. Alternatively
you can use a ladle. Quickly sprinkle some groundnuts on top. When its
golden in color, remove from heat and drain on absorbent paper. Keep in
airtight container.
Note - An old
traditional nutty snack but is still alive and popular. Groundnuts in a
lightly spiced batter and deep-fried to a crunchy snack. Can be time
consuming but well worth the effort.
