Rice Flour Dessert (Bubur Sumsum) Recipe

Ingredients :

1.5 cups rice flour

6 cups water

1 tsp powdered white writing chalk

freshly grated coconut or moistened desiccated coconut

1/2 tsp salt

palm sugar syrup

Method :

Combine flour, water and chalk, and mix well. Strain through a fine sieve into a heavy pan, preferably non-stick. Bring to the boil, then reduce heat and simmer for about 30 minutes until mixture thickens. Cool to room temperature and serve topped with freshly grated coconut mixed with salt, and pour palm sugar syrup over the top.

Note - The sort of chalk used for writing on blackboards may seem a surprising ingredients, but according to Indonesian cooks, it 'adds a gentle, soft flavor'.
