Spring Roll Popiah Recipes

Ingredients :

100g popiah skin or Spring Roll Popiah wrappers

50g crab meat, minced

200g prawn small size, minced

100g chicken meat

100g long beans, shredded

1 medium size turnips - cut into strips

1 medium size carrot - shredded

1 medium cucumber - shredded

2 pieces bean curd - fried and shredded

2 stalk lettuce

2 eggs beaten - made into omelette and cut into strips

2 tsp fried shallots

1/4 tsp pepper

2 cloves of garlic

1 cup stock


100g raisins

10-15 dried chilies, fry with a little oil

1/2 cup tamarind juice

1 tsp salt, to taste

2 tsp sugar, to taste

1 tsp dried onion flakes

2 cups water

Method :

Mix all ingredients and grind in a blender at high speed until a fine textured sauce is obtained. Add water. Taste for salt and sugar.

Preparing Popiah:

Place a popiah skin on a flat surface. Spread some sauce. Place a lettuce leaf on it, followed by the fillings. Garnish with shredded cucumber, eggs and fried crispy onion flakes. Roll the skin tightly and stick the edges by moistening it. Place on a serving plate. Cut into bite sizes with a sharp knife. Spread some sauce over.

Serves 3-4
