Ube Halaya Recipe

Ingredients :

1kg yam (diced small)

250g granulated sugar

325ml condensed milk

500ml coconut milk (from 1 coconut)

butter for greasing

Method :

Steam yam until tender. Grind yam in a food processor with sugar and coconut milk until it is in puree form. Transfer to a saucepan. Add condensed milk and cook over low heat. Stir continuously until mixture turns into a thick paste and separates from the pan. Transfer to a greased shallow pan and allow to cool. Serve.

Serves 4-6
