Carrot and Raisin Rounds Recipe

Ingredients :

butter

raw sugar

egg

finely grated carrot

finely chopped walnuts

finely chopped raisins

self-raising flour

plain flour

cinnamon

nutmeg

ground cloves

coarsely ground toasted muesli

plain low-fat yoghurt

Method :
  1. Preheat oven to 190C and grease oven trays.
  2. Cream butter, add sugar and egg and beat well.
  3. Stir in carrot, walnuts, raisins and 3/4 of sifted dry ingredients.
  4. Add muesli, remaining sifted dry ingredients and sufficient yoghurt to make a firm dough.
  5. Place slightly heaped teaspoonfuls of mixture at intervals on prepared trays, press down tops with a fork and bake 12-15 minutes or until golden brown.
  6. Cool on trays 10 minutes before removing to a cake rack to cool completely.
  7. May be iced with a lemon glace icing if desired.

Makes about 36

These fruity biscuits have a crispy crust but the centers are nice and chewy - and just look at the number you can make from 1 batch.
