Heat the oven to 180C (350F),
Gas 4. Grease a baking tray. Beat together the margarine and sugar. Beat in the egg. Sift together the flour and baking
powder, add any bran remaining in the sieve and stir in the lemon rind
and coconut.
Gradually stir the dry ingredients into
the sugar mixture. Beat well and stir to make a firm
dough. Turn on to a lightly floured surface
and knead until smooth. Roll to 6 mm thickness and cut into
rounds with a 6 cm biscuit cutter (or use a shaped cutter).
Transfer to the baking tray. Bake for 15 minutes, or until golden
brown. Allow to cool slightly, then transfer
to a wire rack to cool. Store in an airtight tin when
completely cold.
