Coconut Wafers Recipe

Ingredients :

eggs

sugar

melted butter

vanilla

shredded coconut

quick-cooking rolled oats

Method :
  1. Preheat oven to 180C.
  2. Line baking trays with greaseproof paper and grease paper.
  3. Beat eggs until foamy, then gradually beat in sugar until mixture is thick.
  4. Fold in remaining ingredients.
  5. Place half teaspoonfuls of mixture on prepared trays, spacing biscuits about 2.5cm apart.
  6. Bake for 10 minutes, or until edges are just lightly browned.
  7. Lift paper from trays and cool biscuits for a few minutes, until they are easy to remove with a spatula.
  8. Finish cooling on wire racks.
