Florentines Recipe

Ingredients :

1 cup

3/4 cup

1/3 cup

60g

1/2 cup

1/2 cup

1 cup

slivered blanched almonds

chopped mixed peel

plain flour

butter

cream

caster sugar

dark chocolate chips

Method :
  1. Preheat oven to 180C, grease and flour 2 baking trays.
  2. Combine almonds, peel and flour; set aside.
  3. In a heavy-based pan, combine butter, cream and sugar.
  4. Heat to boiling, remove from heat and stir in fruit-nut mixture.
  5. Place tablespoonfuls of batter at least 8cm apart on prepared trays.
  6. Bake for 10 minutes until golden brown.
  7. Cool on tray before removing to wire racks to cool completely.
  8. Brush melted chocolate over base of biscuit.
  9. When nearly set, mark chocolate with wavy lines using a fork.
  10. Store in a cool, dry place.
