Method :
- Preheat oven to 180C and grease oven
trays.
- In a small pan, stir together butter
and golden syrup until melted.
- Sift together flour, ginger and soda
in a mixing bowl.
- Stir in sugar, add syrup mixture and
egg.
- Beat with a wooden spoon until
combined.
- Roll dough into small balls.
- Arrange on prepared trays, flatten
slightly with the base of a glass covered with plastic wrap.
- Bake for 12-15 minutes until firm and
golden.
- Cool slightly on tray.
- Remove to a wire rack to cool
completely.
