Method :
- Begin an hour before hand by soaking the corn
meal in a cup of water.
- When ready, drain the corn meal, squeeze out the
remaining water and place meal in a bowl with the syrup.
- Add salt and vanilla and whisk briskly.
- Melt the butter and add in; then stir in the
sifted flour and baking powder.
- Lastly fold in the fruit.
- Form into moist balls and press a piece of nut
into the top of each.
- Bake and store in an airtight tin when cold.
