Oatmeal Sultana Biscuits Recipe

Ingredients :

butter

brown sugar

white sugar

egg

water

vanilla essence

plain flour

cinnamon

bicarbonate of soda

quick cooking oats

sultanas or chocolate bits

Method :
  1. Preheat oven to 200C and grease baking trays.
  2. Beat together butter and sugars until fluffy.
  3. Beat in egg, then water and vanilla essence.
  4. Sift together flour, cinnamon and soda 3 times.
  5. Stir in egg mixture, mixing well.
  6. Fold in oats and sultanas
  7. Drop level tablespoonfuls onto prepared trays, leaving room for spreading.
  8. Bake for 15-17 minutes until edges are browned, but centers still soft.
  9. Cool on racks, store in an airtight container.

Makes about 50

Stir through chopped nuts such as walnuts, almonds, peanuts or cashews in place of half the fruit or chocolate bits.
