Potato Biscuits Recipe

Ingredients :

whole meal flour

salt

rolled oats

margarine

mashed potatoes

Method :
  1. Heat the oven to 170oC (325oF), Gas 3.

  2. Flour a baking tray.
  3. Mix together the flour and salt and stir in the rolled oats.
  4. Rub in the margarine and knead in the mashed potato.
  5. Knead until firm and smooth.
  6. Roll out on a lightly floured surface to about 3 mm thickness and cut into 7.5 cm rounds with a biscuit cutter.
  7. Place the rounds on the baking tray and bake for 15-20 minutes, until crisp but not brown.
  8. Transfer to a wire rack to cool.

Serving Suggestion :

These biscuits go well with cheese or soup, instead of bread.

Makes about 36 biscuits

Per Biscuit : 40 Calories, 2 g fat, 0.5 g fiber.
