Shortbread Fancies Recipe

Ingredients : |
250g
1 tsp
3/4 cup
2 cups
Lemon Icing
40g
1.25 cups
1-2 tsp |
butter, softened
vanilla
icing sugar, sifted
plain flour
butter, softened
icing sugar, sifted
lemon juice
finely grated rind of 1/2 lemon
extra icing sugar for dusting |
Method :
- Preheat oven to 150C and grease oven
trays.
- Cream butter, vanilla and icing sugar
until light and fluffy.
- Add sifted flour and combine to form a
stiff dough.
- Roll pieces of dough into balls about
the size of large marbles.
- Arrange on prepared trays.
- Flatten balls with a fork.
- Bake for 20-25 minutes, or until firm
and pale golden.
- Stand on tray 5 minutes before
carefully lifting to a wire rack to cool.
- To prepare icing: beat together
butter, icing sugar, lemon juice and lemon rind until pale and fluffy.
- Join 2 biscuits together and dust with
sifted icing sugar.
- Repeat until biscuits are complete.
Makes about 36
To keep biscuits fresh, store unfilled shortbread
in an airtight container and join biscuits with butter cream close to
serving time.
