Shortbread Fancies Recipe

Ingredients :

250g

1 tsp

3/4 cup

2 cups

Lemon Icing

40g

1.25 cups

1-2 tsp

butter, softened

vanilla

icing sugar, sifted

plain flour

icing sugar, sifted

lemon juice

finely grated rind of 1/2 lemon

extra icing sugar for dusting

Method :
  1. Preheat oven to 150C and grease oven trays.
  2. Cream butter, vanilla and icing sugar until light and fluffy.
  3. Add sifted flour and combine to form a stiff dough.
  4. Roll pieces of dough into balls about the size of large marbles.
  5. Arrange on prepared trays.
  6. Flatten balls with a fork.
  7. Bake for 20-25 minutes, or until firm and pale golden.
  8. Stand on tray 5 minutes before carefully lifting to a wire rack to cool.
  9. To prepare icing: beat together butter, icing sugar, lemon juice and lemon rind until pale and fluffy.
  10. Join 2 biscuits together and dust with sifted icing sugar.
  11. Repeat until biscuits are complete.

Makes about 36

To keep biscuits fresh, store unfilled shortbread in an airtight container and join biscuits with butter cream close to serving time.
