Grease and base line a 1.2 liter
or 2 pint loaf tin.
Sift the flour, baking powder,
bicarbonate of soda and mixed spice into a bowl, and mix well.
Rub the butter into the flour
until the mixture resembles breadcrumbs.
Stir in the sugar, apricots,
sultanas, walnuts and apple, and mix well.
Add the beaten eggs and enough
milk to make a stiff dropping consistency.
Turn the mixture into the loaf tin
and level the surface.
Bake for 1 hour, until risen and
just firm to the touch.
Cool slightly in the tin, then
turn out into a wire rack to cool completely.
Serve warm or cold, cut into
slices, and with butter, if wished.
Makes 10 slices
Use half whole meal flour and half white
flour. Substitute mashed banana for the apple. Sprinkle 15-30 ml or 1-2
tbsp demerara sugar over the top of the mixture before baking.
