Banana and Date Bread Recipe

Ingredients :

whole wheat self raising flour

baking powder

ground cinnamon

light Muscovado sugar

soft margarine

medium bananas, mashed

eggs

dried dates, chopped

a pinch of bicarbonate of soda

Method :
  1. Stir together the flour, baking powder, soda and spice and stir in the sugar.

  2. Beat in the margarine, bananas and eggs and stir in the chopped dates.

  3. Beat until the mixture is smooth.

  4. Turn into a greased 2 lb (900 g) loaf tin and level the top.

  5. Bake in the oven at 350oF (180oC), Gas 4 for 1 hour 10 minutes.

  6. Partly cool in the tin, then turn on to a wire rack to cool.

  7. When completely cold, wrap in foil and store for 1-2 days.

Makes one 2 lb (900 g) loaf
