Carrot Nut Ring Recipes

Ingredients :

self-raising flour, sifted

milk

grated carrot

chopped walnuts

chopped unblanched almonds

chopped glace cherries

Method :
  1. Preheat oven to 180C and grease a 20cm ring tin.

  2. Beat together butter and sugar until creamy.

  3. Add eggs, one at a time, beating well after each addition.

  4. Stir in flour alternately with milk.

  5. Add carrot, walnuts, almonds and cherries, beating with a wooden spoon until thoroughly mixed.

  6. Spread evenly in prepared tin.

  7. To prepare topping: combine all ingredients in a bowl.

  8. Sprinkle topping over cake batter and bake for 40-50 minutes.

  9. Leave in tin for 5 minutes then carefully turn out.

Makes 1 cake
