Cheese and Lentil Loaf Recipes

Ingredients :

350 g lentils

1 large onion

25 g butter

225 g grated Cheddar cheese

75 g brown breadcrumbs

1 egg

2 tbsp single cream

1 tbsp tomato ketchup

1 tbsp chopped fresh parsley

pinch of ground nutmeg

salt and pepper

Method :
  1. Cover the lentils with cold water and bring to the boil.
  2. Cover and simmer for about 40 minutes until tender.
  3. Drain well and put into a bowl.
  4. Chop the onion finely and cook in the butter until soft and golden.
  5. Add the onion to the lentils with the cheese, breadcrumbs, beaten egg, cream, ketchup and parsley.
  6. Season to taste with nutmeg, salt and pepper.
  7. Grease a 675 g loaf tin and put in the lentil mixture.
  8. Bake at 180C (350F), gas 4 for 45 minutes.
  9. Leave in the tin for 5 minutes, and turn on to a warm serving dish.

Note :

A tasty loaf which is nicest served hot with tomato or mushroom sauce and a salad or vegetables.
