Courgette Bread Recipe

Ingredients :

30g butter or margarine

2 tbsp oil

2 medium onions, finely chopped

1 tsp dried mixed herbs

250g courgettes, coarsely grated

60g pecan nuts or walnuts, coarsely chopped

125g low fat hard cheese, grated

315g self raising flour

3 eggs

60ml low fat natural yoghurt or buttermilk

3 tbsp finely chopped parsley

Method :
  1. Grease a large loaf tin.
  2. Set aside.
  3. In a saucepan, melt the butter or margarine with the oil.
  4. Add the chopped onion and sauté until transparent.
  5. Stir in the herbs.
  6. Set aside to cool.
  7. In a large bowl, combine the fried onion, courgettes, nuts and grated cheese.
  8. Sprinkle the flour over the courgette mixture.
  9. In a separate bowl, beat the eggs.
  10. Add the yoghurt or buttermilk and the chopped parsley; combine well.
  11. Add the egg mixture to the courgette mixture and combine thoroughly.
  12. Spoon the mixture into the greased loaf tin and bake in a preheated oven for 40 minutes or until a skewer comes out clean when inserted in the middle of the bread.
  13. Allow the bread to cool in the tin for 5 minutes before turning out on to a cooling rack.

To vary - Instead of courgettes, use the same quantity of grated carrot.

This may seem an unlikely bread recipe, but it is moist, fragrant with herbs and has a delicious savory flavor.

Makes : 1 large loaf
