Date and Ginger Bread Recipes

Ingredients :

200 g

whole wheat flour

baking powder

bicarbonate of soda

ground ginger

hard margarine

light Muscovado sugar

dried, stoned dates, chopped

crystallized ginger, chopped

milk

Method :
  1. Stir together the flour, baking powder, soda and ground ginger and rub in the margarine.

  2. Stir in the sugar, dates and chopped ginger and mix to a soft dough with the milk.

  3. Turn the mixture into a greased 1 lb (450 g) loaf tin and level the top.

  4. Bake in the oven at 350oF (180oC), Gas 4 for 1 hour.

  5. Partly cool in the tin, then turn on to a wire rack.

  6. When completely cold, wrap in foil and store for 1-2 days, before serving.

Makes one 1 lb (450 g) loaf
