Fig Loaf Recipe

Ingredients :

All Bran

brown sugar

black treacle

dried figs, chopped

milk

wheat meal self raising flour

ground ginger

Method :
  1. Heat the oven to 180oC (350oF), Gas 4.

  2. Grease a 900 g loaf tin.

  3. Soak the All Bran, sugar, treacle and figs in the milk for 30 minutes, until the milk has been absorbed.

  4. Mix together the flour and ginger and stir into the fruit mixture.

  5. Turn into the tin.

  6. Bake for 45-55 minutes, until a skewer pierced through the centre comes out clean.

Alternative Suggestion :

Replace the figs with 100 g chopped dried apricots, and the ground ginger with mixed spice.

Makes 1 X 900 g loaf.
