Herb Bread Recipe

Ingredients :

whole meal flour

salt

bicarbonate of soda

margarine

medium sized onions, grated

clove garlic, crushed

mixed dried herbs

chopped parsley

milk

lemon juice

Cheddar cheese, grated

ground black pepper

Method :
  1. Heat the oven to 200oC (400oF), Gas 6.

  2. Flour a baking tray.
  3. Sift together the flour, salt, pepper and soda and add any bran remaining in the sieve.
  4. Rub in margarine until the mixture resembles fine bread crumbs.
  5. Stir in the onion, garlic and herbs.
  6. Mix together the milk and lemon juice, stir into the dry ingredients and mix to a soft dough.
  7. Turn on to a lightly floured surface and knead lightly until smooth.
  8. Shape into a 23 cm round and place on the baking tray.
  9. Score the top into 8 segments, brush with milk and sprinkle with cheese.
  10. Bake for 30-35 minutes, until well risen and golden brown.

Serving Suggestion :

Serve warm with soup and salad for an informal lunch, or with cheese and a tomato salad for a light supper. It is best eaten on the day it is made.
