Method :

Heat the oven to 200oC (400oF),
Gas 6.
- Flour a baking tray.
- Sift together the flour, salt, pepper
and soda and add any bran remaining in the sieve.
- Rub in margarine until the mixture
resembles fine bread crumbs.
- Stir in the onion, garlic and herbs.
- Mix together the milk and lemon juice,
stir into the dry ingredients and mix to a soft dough.
- Turn on to a lightly floured surface
and knead lightly until smooth.
- Shape into a 23 cm round and place on
the baking tray.
- Score the top into 8 segments, brush
with milk and sprinkle with cheese.
- Bake for 30-35 minutes, until well
risen and golden brown.
Serving Suggestion :
Serve warm with soup and salad for an
informal lunch, or with cheese and a tomato salad for a light supper. It
is best eaten on the day it is made.
