Lakeland Ginger Fingers Recipe

Ingredients :

whole meal flour

bicarbonate of soda

cream of tartar

ground ginger

rolled oats

margarine

brown sugar

piece of grated nutmeg

Method :
  1. Heat the oven to 170oC (325oF), Gas 3.

  2. Sift together the flour, soda, cream of tartar and spices and add any bran remaining in the sieve.

  3. Stir in the oats and rub in the margarine.

  4. Stir in the sugar.

  5. Press the mixture into a greased 30 by 20 cm and level the top.

  6. Bake for 30 minutes.

  7. Cut into fingers and cool on a wire rack.

Makes about 20 biscuits

Per Biscuit : 110 Calories, 6 g fat, 2 g fiber.
