Mulberry Cheese Bread Desserts Recipes

Ingredients :

cottage cheese, sieved

light Muscovado sugar

eggs, lightly beaten

ground almonds

whole meal flour

chopped hazelnuts

dried mulberries

grated rind of 1 orange

Method :
  1. Beat the cottage cheese and sugar, then beat in the eggs and orange rind.

  2. Stir in the almonds and fold in the flour.

  3. Stir in the hazelnuts and mulberries.

  4. Turn the mixture into a greased 2 lb (900 g) loaf tin and level the top.

  5. Bake in the oven at 350oF (180oC), Gas 4 for 1 hour 10 minutes.

  6. Partly cool in the tin, then turn out on to a wire rack.

Makes one 2 lb (900 g) loaf

Note : The cheese bread is very good sliced and eaten with fresh fruit such as apples or peaches.
