Method :

Dissolve the sugar in the water then
sprinkle on the yeast.

Leave in a warm place for 10-15 minutes
until frothy.

Mix together the flour, oats and salt,
make a well in the centre and pour in the yeast liquid and the oil.

Stir well, then gradually pour in the
milk, using just enough to give a soft but not sticky dough.

Turn the dough on to a lightly floured
surface and knead for about 10 minutes, until smooth and elastic.

Wrap loosely in greased polythene and
leave in a warm place until doubled in size.

Heat the oven to 200oC (400oF),
Gas 6.

Grease and warm a baking tray.

Turn the dough into 3 and shape into a
plait.

Place on the baking tray, cover loosely
with greased polythene and leave in a warm place until doubled in size.

Brush with milk and sprinkle with a few
oats.

Bake for about 30 minutes, or until the
loaf sounds hollow when tapped underneath.
Makes 1 x 1.1 kg loaf.
