Onion and Tomato Tea Bread Recipe

wheat meal self raising flour

salt

mustard powder

margarine

grated onion

medium sized tomatoes, skinned, seeded and chopped

chopped parsley

egg

milk

Method :
  1. Heat the oven to 190oC (375oF), Gas 5.

  2. Grease 2 x 450 g loaf tins.

  3. Sift together the flour, salt, pepper and mustard powder and add any bran remaining in the sieve.

  4. Rub in the margarine until the mixture resembles fine bread crumbs.

  5. Stir in the onion, chopped tomato and parsley.

  6. Beat together the egg and milk and pour on to the dry ingredients.

  7. Mix to a stiff batter and spoon into the tins.

  8. Bake for 30-40 minutes, until well risen and golden brown.

  9. Transfer to a wire rack to cool.

Serving Suggestion :

Serve with soup, salad or cheese.

Makes 2 X 450 g loaves.
