Preheat oven to 200C Gas Mark 6. Lightly flour a baking sheet. Sift the dry ingredients together and
mix in just enough buttermilk to make a fairly stiff dough. Turn the dough out onto a floured
surface and knead lightly until the dough has a smooth texture. Shape into a round. Place on the baking sheet and cut a
slash or a cross in the top. Bake for 50-60 minutes. Leave to cool wrapped in a clean tea
towel.
