Pumpkin Date Nut Loaf Recipes

melted butter

finely crushed wheat meal

plain flour

baking powder

bicarbonate of soda

cinnamon

ground cloves

ground ginger

mashed cooked pumpkin

eggs

brown sugar

caster sugar

vegetable oil

chopped pitted dates

chopped pecans or walnuts

sifted icing sugar to decorate

biscuit crumbs

Method :
  1. Grease a loaf tin liberally with melted butter.

  2. Coat tin with biscuit crumbs and set aside.

  3. Sift together flour, baking powder, soda and spices 3 times into a bowl.

  4. In a large bowl, beat together pumpkin, eggs, sugars and oil until blended.

  5. Stir in flour mixture until combined.

  6. Fold in dates and nuts.

  7. Turn into prepared tin, bake for 45-50 minutes.

  8. Stand 10 minutes.

  9. Turn out and cool completely on a wire rack.

Makes 1 loaf
