Method :

Put the milk and 30 ml water into a
small pan.

Bring to the boil, then remove from the
heat.

Put the 15 ml warm water into a small
bowl, stir in the sugar to dissolve, then sprinkle on the yeast.

Leave in a warm place for 10 minutes
until frothy.

Mix with the milk and water and stir in
the salt.

Put the flour into a bowl, pour on the
liquid all at once and stir well.

Cover and leave in a warm place for 1
day.

If you make twice the quantity, it will
stay 'alive' for future use if the bowl is covered and kept at room
temperature.

Do not chill.
Take two days to work.
