Method :
- Soak the beans over night in cold
water.
- Drain well.
- Cover with fresh cold water, bring
to the boil and simmer for 2 hours until the beans are soft.
- Drain well.
- Put the beans into a liquidizer or
food processor with the stock cube, onion, tomato juice, sauce,
sage, salt and pepper.
- Blend until smooth.
- Chop the pepper and celery finely.
- Grate the carrot coarsely.
- Mix into the bean purée.
- Place in a greased 450 g loaf tin.
- Bake at 400F, Gas 6 for 45
minutes.
- Turn on to a warm serving dish.
Note :
A tasty baked loaf which may be served
hot or cold with a vegetable sauce and salad.
