Soya Bean Loaf Recipes

Ingredients :

225 g soya beans

1 chicken stock cube

1 slice onion

150 ml tomato juice

1 tsp Worcestershire sauce

pinch of sage

salt and pepper

1 green pepper

1 celery stick

1 medium carrot

Method :
  1. Soak the beans over night in cold water.
  2. Drain well.
  3. Cover with fresh cold water, bring to the boil and simmer for 2 hours until the beans are soft.
  4. Drain well.
  5. Put the beans into a liquidizer or food processor with the stock cube, onion, tomato juice, sauce, sage, salt and pepper.
  6. Blend until smooth.
  7. Chop the pepper and celery finely.
  8. Grate the carrot coarsely.
  9. Mix into the bean purée.
  10. Place in a greased 450 g loaf tin.
  11. Bake at 400F, Gas 6 for 45 minutes.
  12. Turn on to a warm serving dish.

Note :

A tasty baked loaf which may be served hot or cold with a vegetable sauce and salad.

Serves 4 - 6
