Toasted Bread With Garlic And Oil Desserts Recipes

firm-textured white bread, in 1 cm thick
large whole cloves garlic
best quality extra virgin olive oil
salt to taste
freshly ground black pepper
Method :
In
Tuscany, the new season's oil, just pressed, is used for this simple but delicious snack.
Ideally, the bread should be toasted over the glowing embers of a wood fire.
Otherwise, toast it in a preheated oven at 400oF (200oC), Gas 6 until crisp.
It is important that the bread dries out while toasting, which it won't if browned in a toaster.
Rub each slice all over with the garlic.
Arrange the toasted bread on a serving platter.
Season with salt and pepper and drizzle with the oil.
To make bruschetta, top each slice with about 2 tablespoons of diced and seeded ripe tomatoes and sprinkle with torn fresh basil leaves.
Other Tuscan toppings include lightly boiled, shredded dark cabbage leaves, and home-cooked cannellini beans.

Note :
Try to buy traditionally baked white bread, with a dense, ivory-colored crumb, such as a Tuscan loaf or French pain de champagne, a day or two in advance. Mass produced steam baked bread is not suitable.
