8 tbsp (1 stick) butter or margarine, cut
into small bits and softened
pinch of salt
approximately 1 1/4 cups buttermilk
Method :
Preheat the
oven to 350F. Grease an 8 inch round cake pan. Mix the flour, wheatmeal,
and baking powder in a large bowl, and cut in the butter until the
mixture resembles meal. Stir in enough of the buttermilk until the
mixture masses together to make a soft dough. On a well floured kneading
board, knead the dough for about 30 seconds and quickly shape into a
firm ball.
Press the
dough into the pan and cut a cross with a sharp knife from side to side
of the pan. Bake for approximately 45 minutes or until a crust has
formed and it sounds hollow when tapped on the bottom.
