Breakfast Burrito with Tomato Basil Topping Recipe

Ingredients :

1 large tomato, diced

2 teaspoons finely chopped basil

1 medium potato, peeled and grated (about 1 cup)

1/4 cup chopped onion

2 teaspoons margarine

1 cup Egg Beaters

1/8 teaspoon ground black pepper

4 (8 inch) flour tortillas, warmed

1/3 cup shredded low-fat cheddar cheese

Method :
  1. In a small bowl, combine tomato and basil; set aside.
  2. In nonstick skillet over medium heat, cook potato and onion in margarine until golden and tender, stirring occasionally.
  3. Add egg and pepper; cook until done, stirring occasionally.
  4. Remove from heat.
  5. Divide egg mixture evenly between tortillas and top with cheese.
  6. Fold up one end of each tortilla over filling.
  7. Fold in sides like an envelope.
  8. Serve immediately topped with tomato mixture.
  9. Serves 4
