Method :
- In a saucepan, combine the
spinach, cheese and nutmeg.
- Heat thoroughly but do not boil,
or the cheese will toughen.
- Meanwhile, poach the eggs until
well set.
- Spoon the heated spinach mixture
in a neat round in the center of a dinner plate.
- Arrange the poached eggs on top.
- Serve.
