Eggs Florentine Recipes

Ingredients :

90g cooked fresh spinach or frozen spinach, thawed and well drained

2 tbsp cottage cheese

pinch of nutmeg

2 eggs

Method :
  1. In a saucepan, combine the spinach, cheese and nutmeg.
  2. Heat thoroughly but do not boil, or the cheese will toughen.
  3. Meanwhile, poach the eggs until well set.
  4. Spoon the heated spinach mixture in a neat round in the center of a dinner plate.
  5. Arrange the poached eggs on top.
  6. Serve.

Serves 1 - 2
