1 tsp
butter or margarine or use a good quality non stick cooking spray
Method :
Lightly beat eggs with water or
milk and the pepper.
Over low to medium heat, melt the
butter or margarine in a small, heavy based frying pan or omelette
pan or spray the pan well with non stick cooking spray.
Add the egg mixture to the pan.
Keep heat at low to medium.
Tilt pan to distribute egg evenly.
Leave the egg to set for 1 minute.
As the egg begins to set, tilt the
pan and use an egg slice or spatula to lift the edge of the omelette
carefully, allowing the uncooked egg on top to run underneath.
Leave the egg to set for a further
30 seconds.
Lift the opposite edge of the
omelette and let egg run underneath again.
If you are making a filled
omelette, add the filling at this point.
When the omelette is set
underneath but is still moist on top, use an egg slice or spatula to
fold it in half.
