Method :

Heat the oven to 220oC
(425oF), Gas 7.

Grease a baking tray.

Stir together the All Bran and milk
and leave for about 10 minutes, until the liquid has been absorbed.

Stir together the flour, baking
powder, if used, and salt and rub in the butter until the mixture
resembles fine breadcrumbs.

Beat the egg into the soaked bran
mixture, pour it on to the flour and stir quickly to form a dough.

Knead the dough lightly and shape
into an 18 cm in round.

Lightly score the top into 8
sections and brush with milk.

Place on the baking tray and bake
for 10-12 minutes.

Serve warm with cottage cheese and
sultanas or raisins.

The dough can be made the evening
before, and left ready to bake fresh for breakfast.

Glaze the top just before baking.
