potatoes, peeled or scraped
whole meal flour
bran
mustard powder
small onion, grated
eggs, beaten
salt and ground black pepper |
Method :

Soak the potatoes in cold water for
at least 30 minutes.

Grate and discard any liquid.

Stir in the flour, bran, mustard
powder and onion, season with salt and pepper and then stir in the
eggs.

You can prepare the mixture to this
point overnight.

Heat a heavy non stick frying pan
(smear lightly with oil, if necessary).

When the pan is hot, drop in
spoonfuls of the mixture.

When brown underneath, turn over
and brown the other side.
Serves 4

Serving Suggestion :
Serve with grilled tomatoes, mushrooms, fish or low fat cottage cheese.
