Rich Oatmeal Biscuits Recipe

Ingredients :

100 g

65 g

whole meal flour

baking powder

margarine

medium or coarse oatmeal

brown sugar

egg, lightly beaten

pinch salt

Method :
  1. Heat the oven to 180oC (350oF), Gas 4.

  2. Grease a baking tray.

  3. Sift together the flour, salt and baking powder and add any bran remaining in the sieve.

  4. Rub in the margarine until the mixture resembles fine bread crumbs.

  5. Stir in the oatmeal and sugar and bind the mixture with the egg.

  6. Knead to a smooth dough.

  7. Roll out on a lightly floured surface until 6 mm thick and, using a 6.5 cm in cutter, cut out in rounds.

  8. Transfer to the baking tray and bake for 15-20 minutes, until golden brown and crisp.

  9. Allow to cool slightly, then transfer to a wire tray.

  10. These are very good instead of toast, especially if eaten with fresh orange segments or dried fruit compôte.

Makes 16 biscuits

Per serving : 5 g fat, 1 g fiber
